Hi,
I ferment the milk kefir grains for 12-24hrs. I leave my covered kefir gainhrs on my counter. I don’t like mine too tart. If I want too once I have strained the grains I leave the kefir out for another 12-24hrs-the second fermentation. I don’t put my grains in the frig unless I not going to make kefir. You will have to renurish them again. Cold puts the grains to sleep. You would have to wake them up.
