    No, it turns over into sugar. It’s something you could consider eating much later down the line as a replacement for white rice.

    It’s ok if you eat it sparingly but not ok if you eat it regularly. Rice is a high starch food item and starches convert to sugar. It also contains light amounts of sugar. Buckwheat is a good alternative because it is a prebiotic that feeds the beneficial bacteria in the gut. It also contains only 25% starch and has similar texture.

    These are the best forms of rice to eat though; I would not eat brown or white rice because these do not have as many nutrients.
