This is like a hybrid version of Sam’s bread & the hemp coconut biscuits.
3/4 cup of hemp protein
3-4 teaspoons of cinnamon
2 teaspoon of ginger
1 teaspoon of all spice
1/2 cup of milled flaxseed powder
3/4 of a teaspoon of baking soda
a pinch of salt
1/4 cup of coconut oil & 1/4 cup of olive oil
1/4 cup of light coconut milk
stevia to sweeten

This recipe is so great, I make it almost every other day! Sometimes I add vanilla beans, sometimes cardamom. After they cool, I cut them and put them in tupperware in the fridge.
Lately I have been experimenting with using more oat bran and buckwheat flour in place of some of the hemp powder and it works great, cup for cup. I usually use homemade almond milk (it’s easy!) or kefir in place of coconut milk.
Also, I always replace the eggs with flax seeds or chia seeds.
1 egg = 1 T ground flax or chia (chia can be ground or whole) mixed in 3 T water or milk. Mix in water until it becomes gelatinous before adding to recipe.
This recipe is very forgiving, fun, and filling. Great snack- thanks for sharing!
