Maybe I’ve been on this diet one day too many but I just made pancakes that taste AMAZING. The recipe is from memory and I do not remember exact measurements.
Night Before Wet Ingredients:
3 tablespoons rice bran
2 tablespoons water
2 tablespoons kefir whey
1 tablespoon oat bran
1/4 teaspoon salt
2 tablespoons rice bran
3 tablespoons oat bran
1 tablespoon grape seed flour
1 teaspoon salt
1/2 teaspoon baking soda
About 7 dried stevia leaves crumbled
Day-of Wet Ingredients:
1 tablespoon Coconut oil
1. Let the “Night Before Wet Ingredients” sit in a covered dish/jar, unrefrigerated for 8 hours.
2. Mix dry ingredients
3. Combine all ingredients.
4. Fry in coconut oil on medium heat
Experiment with the measurements. The final batter should not be too thick nor too watery. These pancakes came out slightly sweet, super moist, and I was able to make them a bit crispy at the edges as a personal preference. I do not know that soaking the night before is necessary. I hope this works for other people!
