With a grain-free, sugar-free, yeast-free Granola like this, you’ll never miss the traditional kind.
-3 cups oven-dehydrated leftover almond pulp from homemade almond milk (or any nut)
-any kind of candida-friendly nuts, raw or toasted
-1/2 c. shredded coconut
-1/4 c. ground or whole flax seed, chia seed, hemp seed
-2 organic eggs
-1/4 c. coconut oil
-1 tsp. alcohol-free vanilla
-1 packet powdered stevia
-1/2 tsp salt
-cinnamon, ginger or other spices to taste
Set oven to 250F. Line a large baking sheet with parchment paper. In a large mixing bowl, mix all dry ingredients, minus stevia. You can get as creative as you like, there are no rules here! Feel free to play around with measurements. In a small bowl, beat one or two organic eggs until well mixed, add melted (but cooled) coconut oil and vanilla and blend. Add liquid ingredients to dry and mix until everything well coated. Put in preheated oven and gently toast until nice and dry and crunchy (test and stir every ten minutes or so.) This should take about 20-25 minutes, but keep checking back. Store in large mason jar in fridge or freezer.February 12, 2017 at 12:34 pm #173768

Tried this and it was delicious. I added a little extra salt and cut down on the stevia. Also, make sure that you get the unsweetened shredded coconut!
