I usually fry my chicken in the same way every time, and then decide if I want to use it in a salad, serve it with some kind of sauce and quinoa and so on… Just thought I’d share my recipe for simple and delicious chicken bits, and the quinoa hash that I usually eat with it!
Raw chicken 1 tablespoon coconut oil 1 teaspoon/tablespoon lime juice, depending on taste 1 – 2 grated garlic clove, depending on taste Cayenne pepper Turmeric powder Salt/herb salt
Chop up the chicken into pieces, turn on the stove and put coconut oil in the pan, fry the chicken and season with all the mentioned ingredients. Done! Be careful not to fry the chicken too long as it can get really dry.
Quinoa of your choice (I recommend red or black quinoa for this recipe) 2 – 3 tablespoons of creme fraiche (if you’re in the later stages of the diet)/greek yoghurt Lemon pepper
Clean and cook the quinoa, then put in a good amount of creme fraiche/greek yoghurt. Season with lemon pepper and stir. Done!
