I just saw a product in the health food section of my grocery store. It was coconut sugar. It is made of crystalized coconut nectar. I’m not sure what coconut nectar is, but I know that most coconut products are allowed and beneficial if they are organic and have no sugar added. The product is made by Madhava Natural Foods.

When the coconut tree is tapped, it produces a naturally sweet, nutrient-rich ‘sap’ that exudes from the coconut blossoms. This sap has a very low glycemic index score and contains 17 amino acids, minerals, vitamin C, broad-spectrum B vitamins, and has a nearly neutral pH.

Coconut sugar is a sugar produced from the sap of cut flower buds of the coconut palm.
