    Another delicious pancake recipe.

    INGREDIENTS:

    2 eggs
    2 tbsp coconut oil, melted
    1/4 tsp coconut or vanilla extract
    1/2 c. coconut milk

    3 tbsp sifted coconut flour
    1 tsp sugar (omit or use Stevia)
    1/8 tsp salt
    1/8 tsp baking powder

    DIRECTIONS:

    – Blend together eggs, oil, extract, coconut milk, salt and sugar (if used or Stevia)
    – Combine coconut flour with baking powder and blend into batter
    – Heat 1 tbsp of coconut oil in a skillet
    – Spoon batter into hot skillet making pancakes
    – Makes about 8 pancakes

    – This recipe is quite moist, but the pancakes dry out when cooking
    – I recommend using a tbsp to make 6-8 small (but filling) pancakes
    – Flip when underside is golden brown and the uncooked side’s edges are drying

    – If you are going to use Stevia, you might want to experiment with quantity as 1 tsp may be too much or too little
