This is similar to many other recipes it just has less eggs and a few other little tweaks but is delicious and exactly the way i like it. I’ve been eating a loaf of this a day for the past month and a half… You can probably replace more water for kefir and add a little less oil as well. And of course all the spices are optional…..
Chai Coconut Oat Bran Bread
1 C yogurt, coconut milk or kefir
3/4 C water or any of above
*must have small amount of yogurt or kefir to react with baking soda.
1/3 C coconut or olive oil
3/4 C oat bran
3/4 C coconut flour
1 t baking soda
1 t cinnamon
1/2 t cardamom
1/4 t each of clove, nutmeg & pepper
1/2 t salt
*1/8 – 1/4 t stevia optional & depending on the sweetness you desire
Grease a loaf pan. Preheat oven to 350. Mix ingredients. Pour into pans. Bake 1 hour..

This is amazing…my 2-year-old nephew even loved it!
Beware: if you are like me and use freshly ground cardamom, you can cut the amount in half – fresh is delicious but strong! 🙂

I tried this recipe but it was too wet after and hour so i put back in the over 10 min more.
The bread did not hold together can anyone help me?
I did use Bob mills gluten free oat bran is this correct?
