Ingredients 4 tsp apple cider vinegar (Use only type described on allowed list) 1 Tbsp olive oil, extra-virgin 1/2 tsp table salt 1/4 tsp black pepper 1 cup(s) fresh cherry tomato(es), quartered (about 12 tomatoes) **Only when allowed. (I ommited these for now) 1 cup(s) (sliced) avocado, peeled (about 1 medium) 2 cup(s) cucumber(s), chopped 1-2 Cloves of garlic ( I added this to the recipe)
Instructions Combine first 4 ingredients in a jar; cover tightly, and shake vigorously. Place tomato, avocado and cucumber in a bowl; add vinegar mixture, and toss gently to coat. Serve immediately. Yield: 4 1-cup servi
I did not use tomatoes as I am not yet at that stage where they are allowed. I also added lemon juice to recipe the second time…or I guess when I scooped it out for me to eat.
