I bought some Jerusalem artichokes for the first time today and came across this recipe, which is fine if you leave out the wine http://www.bbc.co.uk/food/recipes/jerusalemartichokeso_88168
I basically just sweated the garlic and onion with some herbs in plenty of olive oil, fried the artichokes for a few minutes and then finished them off in some water before seasoning. I put some steamed asparagus and green beans on top and poured over the pesto (I think that’ll go well on salads too). It’s one of the tastiest things I’ve eaten since starting and so easy to make. Definitely going to be making it again.
