Hi,

Ferment it for 12-24 hours, then take out the grains, and leave the liquid in the fridge for 1-2 more days.
This will allow the bacteria to eat more of the remaining sugar.

The longer you leave it, the more sugar will be consumed.
If it tastes a little sweet, just leave it for longer.
