Soba is more than 50% white flour. You need to get ones made with 100% buckwheat (juu-wari soba). As with everything, check the ingredients carefully. Rice noodles are pure starch, so avoid them. Shirataki are a good option for soups. They’re just water and prebiotics, so don’t expect them to taste of anything though.
