Hi, I believe that a substance in egg white called avidin kills off/inhibits biotin in the body, which is something which itself inhibits candida from changing to its mycelial form. Biotin is something we need to fight candida. Egg YOLK does not contain avidin, and the traditional way to make mayo is with egg yolk and oil. I’ve found it quite difficult to do, but am persisting with it because when it worked the result was amazing! You can apparently cook the egg yolk first which I think I tried once but didn’t have much success making the mayo.
