Well the sugar content is quite low imho, and this isn’t a no sugar diet. This is a low sugar diet. So I wouldn’t worry about the sugar content. Also, are you going to eat a whole loaf at once? If spread out, you are maybe consuming 1g of sugar per slice which is basically nothing to worry about.
I would try out the coconut bread recipes that others have done before for best results. The coconut milk could be problematic because it is highly inflammatory.
