Could you just use coconut water or other organic fruit juices instead of adding sugar & dried fruit?
Worth a try! (I’m assuming that certain finished ‘juice’ fermentations would be OK to drink sugar wise?! Any opinions? I’ve seen a few posts here re: fermented grape juice so I’m hoping that enough of the sugar is converted!!
I’ve done it with grape juice. You need to mix it with water depending on the sugar content. Doing it airtight creates an insane amount of gas. For some reason my standard recipe is always completely flat, despite fast growth rates.
You’ll end up with too many to use if you’re fermenting sugary grains properly, so having some spare for experimenting shouldn’t be a problem. Dairy grains grow much slower and take time to adapt to non-dairy stuff.
