You only need to avoid dairy completely if you have a sensitivity to it, otherwise kefir and Greek yoghurt are great sources of probiotics. You can make water kefir if you are sensitive, so a “no kefir” rule is insane given its benefits.
I’d check out the diet on the forum here since it’s a lot safer than others that include brown rice and beef and other questionable foods. You’ll find a lot of good info here that should answer a lot of your questions, and there’ll be people to help you when you get lost. For some reason, there seems to be a trend lately to practically harass new members though, so I wouldn’t take it personally.
