Coconut bread! It’s delicious and will help up your calories. Eat as much as you can. Eat avocados, coconut oil, etc. Count calories and make sure you are getting enough. There is a good website (myfitnesspal.com) that also has an app for iPhone and android (I believe) that can help with this. Don’t shy away from fat and protein!

Check out the “recipe” section – there are lots there! Goof around with the recipes until you find something that works for you. I personally use less eggs and add in some water to make it moister.
