This is what I think symptom free looks like:
-No food reactions to all foods including wheat, beer, gluten, sugar, molds, and dairy for days of eating it in a row.
-No bad stools after eating these foods.
-Good digestion (2-3 stools per day).
-No die-off after taking large dose of antifungals.
-No nagging symptoms such as fatigue, malaise, headaches, brain fog, ringing ears, mucous production after cheating, etc.
-Good sleep, no anxiety, low stress, good memory, etc.
-No food cravings.
I think when this happens, you have healed leaky gut very well, you have created a very strong gut flora, and candida no longer exists in large numbers in its fungicidal state. Remember candida has two forms…the harmless yeast form, and the pathogenic fungal form.

I would test yourself out and eat something like a small tiny piece of chocolate, some fruit, nuts, piece of bread, sip of beer, white rice, etc. If you have bad leaky gut still, you will have a reaction to any of these almost immediately. If no reaction, try this item out for a few days in a row. If still nothing wrong, start to slowly venture forward off of the diet.
