Almonds have been a staple to my candida diet. I’m not sure if they “cause” die-off but they don’t ignite symptoms (at least for me). HOWEVER!!!!!! you must prepare them properly.
If you just buy them and eat them out of the bag your liklihood of a reaction is high (at least for me I react). Here’s what I do and seem to stay fine (once again, this is me, might not be the same for you):
1. Buy either organic or plain bakers ready almonds (a lot of good tasting almonds are smoked which is a no-no).
2. Keep them in the freezer between preparing them (maybe this isn’t necessary but I do it).
3. Soak them in water for at least 12 hours (CRITICAL!!!!)
At this point you can drain them and eat them, however what I do is:
4. Bake them in the oven at 350F for about 30-35 mins total. I rotate them around so they bake. I like them juuust before they are burnt. I put just a little bit of olive oil on them and then sea salt.
I have them with me everywhere. A handful of almonds chased by 0% Fat Plain Organic Probiotic yogurt is my “big treat” and I love it! Hashtag: thisdietsucks 🙂
