I got through the vegetable phase by eating a lot of eggs/avocados and supplementing my diet with chia seeds and hemp protein. Even so it was a struggle – I remember googling non starchy vegetables to see which had the highest carbohydrate contain and making loads of thick broccoli soup. If I had to do it again I would lay down a stock of thick veggie soups before I even started, one thing you don’t realise is that you even feel too weak/apathetic to cook!
Thanks! I did eat eggs, and i tried to eat avocados, but I live in Alaska, and avocados are expensive and never ripe right off the shelf and they take FOR FLIPPING EVER to ripen. (Seriously, it’s been like, 5 days in a paper bag and mine STILL aren’t ripe.) I didn’t think about the chia seeds and hemp protein, I guess I thought the part was supposed to be strictly vegetables.
