I still have to tweak this recipe some, but try this and let me know how it works out. I’ll submit an improved recipe soon : )
Candida-safe easy lemon bars:
1/2 cup oat bran
1/3 cup coconut flour
1 cup coconut milk (or water)
1/2 cup lemon juice
3 tbsp extra virgin olive oil
3 tbsp coconut oil
1/4 tsp salt
2 tsp baking powder (OMIT IF USING EGGS)
1/4 tsp stevia (or to taste)
1/2 tsp ground ginger (optional)
2 eggs + 2 egg yolks (or 2 tbsp ground flax + 1/2 cup water to make vegan)
1) Blend all ingredients until smooth, 30-60 seconds.
2) Transfer to medium saucepan and cook over low heat 5-7 minutes, stirring occasionally. If using eggs, it’s especially important to keep the heat low and stir more frequently. Cook thoroughly if using eggs (or to a temp of 160f)
3) Transfer to a small, greased (coconut oil) casserole dish and refrigerate for 60-90 minutes. Cut into squares and serve.
4) If the mixture is still very soft, cut into squares and transfer to a wax-paper-lined sheet tray. Freeze 30-45 minutes and serve.
