Thanks for the interesting information. I believe that I have undiagnosed celiac, but I’m not willing to go to the expense or hassle of all the testing to find out. Besides that I hear that it is harder to diagnose celiac once you’ve gone gluten free and I’m not willing to go back to eating it to find out. Since I have been on the Candida/leaky gut diet and have cut out the gluten, I no longer get the horrible stomach pain and diarrhea issues that I use to.
One time when I was eating out and ordered off the gluten free menu, I ended up getting sick from the salad that was cross contaminated because they used the same bowl to toss my salad that they used to toss other salads with bread crumbs. So even though I believe that my candida overgrowth is under control now and the leaky gut is healed, I still have problems with gluten.
