This is purely conjecture, but I would say…

1. You could rinse it or dump out some juice and add more water. I think it would just extend the fermenting process, but if you’re only 3 days in, no big deal. (My last batch of kraut took 4-5 weeks.)

2. You could start a second batch with just a little salt, then mix the 2 when they’re done.
