I Am a baker so I have been really trying to figure out a good recipe through trial and error.
The last loaf I made was the best, so here is the recipe:
3/4 cup coconut flour
1/2 oat bran flakes
1/4 buckwheat flour
1 1/2 tsp baking powder (aluminum free)
1 tsp himalayan salt
1/2 cup coconut oil
1/2 cup olive oil (cold pressed)
Grease glass loaf pan with coconut oil.
Whisk the dry ingredients together.
I usually beat my eggs with a mixers so that they are light and fluffily.
Then add the eggs. Whisk.
Then add the coconut oil. Whisk.
Then add the olive oil. Whisk.
Bake at 350 for about 50-60 minutes.
When it comes out, I drizzle it with some olive oil and eat it with vegetables, eggs, or as a side to any meal.
I once tried 3/4 cup of buckwheat instead of the oat bran and found that the bread made me very bloated. So I suggest trying this one.
I am an advocate of a great tasting olive oil in addition to your diet. It is a healthy fat. And it makes the food taste delicious.
