Gluten free bread is not the same as yeast free, sugar free, dairy free, mold free, and grain free bread…so I would examine your bread’s ingredients and determine whether its a benefit to your health.
Almonds and almond milk can significantly set back your progress because of mold content alone and I didn’t include almond butter until 6 months into my treatment. I would try avoiding these for a week and see if your heal faster or not. All of these items are phase 2 items.
One way to improve your blood sugar throughout the day is to snack more often between meals; eat something simple like celery and you’ll notice a difference likely.
The foods on our allowed foods list should not give you blood sugar problems either in the long run.
