Well both rice and nuts should be stage 2 and you’ve been on the diet long enough to go to this stage and start trying things out. This should include beans/legumes as well.

If you soak both beans and nuts, this should reduce the mold content found within them. Nuts are a good source of protein. Roasted nuts have a carcinogen within them (created in roasting process) which should generally be avoided.
