If you want to know why you are bloating, I would look no further than all of the nuts/seeds that you are eating. These contain molds which feeds the candida and can cause bloating…I know from my own personal experience. I ate sunflower seeds the first 4 months of my diet and it only set me back. Once I removed them I started to heal much much better.
I would not be scared about stage 1 whatsoever…there are plenty of foods to eat, you just have to wrap your mind around it.
Quinoa and almond milk also feed candida and I haven’t had either of these throughout my treatment (just reached the 1 year mark). A great alternative to quinoa is buckwheat, which is a prebiotic that feeds the probiotic and beneficial bacteria in the gut.
It can take as long as 6-18 months to fully recover from candida, so I would consider how you are going to tackle this monster and come up with a better plan. I have not heard of anyone on the forum who went directly to stage 2 and had it solve their problems or reach a cure…sorry if my words are harsh, but just trying to give you a nudge in the right direction.
