In your situation, I would stop drinking the commercially-made kefir. We have no way of knowing the length or quality of fermentation used with the product, and this goes for all other commercial brands. The time to consider commercial brands is when all of your symptoms, die-off and Candida alike, have disappeared completely. I would eventually look at the idea of making your own kefir.
If you want to wait a few days before you start back on the coconut oil, that’s fine, no problem there.
If coconut bread has any antifungal value, I imagine it’s rather limited.
