Do you think these would be safe for phase 1? Artichokes are on the safe list, but I'm wondering about sunchokes (alternately named Jerusalem artichokes) as they are a bit sweet.

They are the bees knees, and I will be in heaven if I can eat them!

Absolutely these are acceptable. They’re one of the best whole-food prebiotics you’ll find.

So go ahead and have yourself a couple of bee's knees.
